Cachaça and rum both originate from sugarcane but differ significantly in their base ingredients and flavor profiles. Rum is typically crafted from molasses, a by-product of sugar production created by boiling sugarcane juice into a thick syrup. Its flavors range from sweet and caramel-like in light varieties to rich, smoky, and complex in aged or dark rums. In contrast, cachaça is made from freshly harvested and crushed sugarcane juice, which is fermented and distilled. This process yields a grassy, earthy, or fruity flavor that emphasizes the natural freshness of the sugarcane.

Fermentation
The sugarcane juice is transferred to fermentation tanks where yeast is added. The yeast converts the natural sugars in the juice into alcohol over a few days.

DISTILLATION
Rio 40° exclusively uses copper pot stills in its production process. The fermented liquid is carefully distilled in these copper stills, which separate the alcohol from impurities while concentrating the spirit. Only the “heart” of the distillation—the highest-quality portion—is retained, as the first and last fractions, known as the “head” and “tail,” are discarded to ensure exceptional purity and flavor.

The Cachacier is the master artisan behind every stage of Rio 40° Cachaça production, overseeing the entire process from the planting and harvesting of sugarcane to fermentation, distillation, aging, and blending. This expert ensures that every step meets the highest standards of quality, culminating in a product of exceptional excellence.
Central to the Cachacier‘s role is managing the farm’s sustainable practices. This includes sourcing pure water for production and repurposing sugarcane bagasse as a renewable energy source for the distiller’s boilers. By-products like methanol are utilized as fuel for combustion engines, while ash from bagasse burning is recycled as a natural fertilizer to enrich the soil.
The Cachacier also directs the aging process, meticulously monitoring the distillate as it matures in barrels made from diverse woods such as American oak, amburana, and peanut wood. Through careful analysis and periodic tastings, the Cachacier ensures the cachaça develops its signature flavor and character, resulting in a spirit of unparalleled quality
